Lobster in oil infused with Cava and a black truffle vinaigrette

Boil water with the salt, bay leaf and a few pepper corns.
Once the water begins to boil add the lobster.
Prepare a bowl with water and ice for plunging the lobster directly in this from the boiling water in order to cool and stop the cooking.
Clean and crack open the claws clean in order to make for easier eating.Recommended Cava: BRUT RESERVA or GRAN RESERVA.
Ingredients (4 pax)
- 1 lobster 500/600 g
- Mixed baby green leaves
- Sea salt and Pepper, bay leaf
For the vinaigrette:
- Arbequina extra virgin olive oil
- Cava vinegar
- Glass of Brut Nature Cava
- Black truffle cut in julienne
- Mustard optional
